Cornbread Casserole
Serves: 8 Cooking Time: 1 hour
Ingredients:
- 1 box Jiffy cornbread mix
- 1 stick of butter, melted
- 1 egg
- 1 cup sour cream
- 1 jalapeno, seeds removed, chopped (don’t worry- the jalapeno is not spicy when cooked!)
- 1 can cream corn
- 1 can sweet corn, drained (or use 8 oz frozen corn, don’t be afraid to eyeball the amount)
Directions:
Preheat oven to 350 F. Mix ingredients in casserole dish (make sure it is tall, the mixture will rise like bread). Bake in oven for 1 hour, or until a toothpick comes out clean when poked in the middle.
