Cucumber Sandwich

Serves: 1 Cook Time: 5 minutes

Ingredients:

  • Cucumber, thinly sliced (as much as you want to put on your sandwich)
  • Tomato, sliced (again: as much or little as you want)
  • Hummus
  • Half an avocado, mashed
  • Red wine vinegar (can substitute balsamic, apple cider, or rice vinegar)
  • 2 slices of bread (preferably fresh bakery bread)
  • Spinach (or any other type of greens)

Directions:

One one slice of bread, spread hummus. On the other, spread mashed avocado. Optionally, add a dash of pepper on top of the avocado.

Place cucumber and tomato slices on the bread slice with avocado. Place spinach on top. Splash a little vinegar onto the spinach. Put the other slice of bread with the hummus to finish making your sandwich.
